The US Department of Agriculture database define the amazing nutrients of Chia seeds: 631 mg of calcium per 100 grams of Chia seeds, five times that of milk. It is also a complete high-quality protein containing 20 amino acids, which is very rare in plant proteins. The phosphorus content of Chia seeds is 11 times whereas the potassium content is 4.6 times higher and the protein content is 5-7 times than that of milk! It is therefore called plant-based milk. In comparison with wheat, rice, barley, oats, corn, the calcium content is 13-354 times higher, the phosphorus is 2-12 times higher and the potassium is 1.6-9 times higher. The iron content of Chia seeds is also the highest among all seeds, up to 6 times that of spinach, 1.8 times that of lentils, and 2.4 times that of beef liver.
